The Crust

  • ¼ cup coconut flour
  • ¼ cup nutritional yeast
  • ½ tsp sweet Spanish paprika
  • ½ tsp garlic powder
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • Salt to taste

The Bites

  • 3 ripe but firm avocados
  • 1 egg, beaten

Method

1. Mix the crust

In a shallow bowl, combine the coconut flour, nutritional yeast, paprika, garlic, thyme, oregano, and a generous pinch of salt. Mix well. The nutritional yeast is the secret here — it adds a deep, savoury umami note that makes the crust taste almost cheesy.

2. Prep the avocado

Halve and pit the avocados. Cut each half into 2–3 thick wedges — you want substantial chunks, not thin slices. They need to hold their shape in the pan. Pat dry with paper towel if they're very moist.

3. Coat

Dip each avocado piece in the beaten egg, letting excess drip off. Then press firmly into the coconut flour crust mixture, coating all sides. Don't rush this — press gently so the crust adheres well.

4. Cook

Heat a splash of neutral oil in a non-stick pan over medium-high heat. Once hot, add the avocado bites in a single layer. Cook for 2–3 minutes per side until deeply golden and crisp. Don't move them too early — let the crust set before flipping. Alternatively, air fry at 400°F for 8–10 minutes, flipping halfway.
